Open Faced Tart Cherry Prosciutto Sandwich Recipe

Ingredients

  • 2 slices bread, toasted
  • 1/2 cup white cannellini beans
  • 1 ounce goat cheese
  • 1/4 cup dried Montmorency tart cherries
  • 4 slices prosciutto
  • 1/2 cup arugula
  • Cracked pepper to taste
Directions 

Drizzle bread with a little garlic olive oil and toast until crunchy.

In a bowl, mash together beans and goat cheese.

Top both pieces of toasted bread with equal parts bean/goat cheese spread.

Divide Montmorency tart cherries on top of beans/goat cheese, followed by two slices of prosciutto each.

Sprinkle arugula on top of creation. Top with cracked pepper if desired.
